Wholesome Nut Bars!

So I was looking for a muesli bar recipe that was healthy but did not crumble... I have tried a few in the past but never made them again as they were always too crumbly!!! I didn't have much luck so I invented my own..and this is the end result. They are super tasty, healthy, don't crumble and they are even chewy!!!!
These bars are obviously full of nuts so if you want to make some bars for school and its a 'no nut policy' you can just adapt this recipe by adding more of the other ingredients to replace the nuts. These bars are a winner for an after school snack at our house. My son (7) gives me a mark of 10 out of 10 for these... and he's the fussy one so they must be pretty good..hehe!! xx J


You need:
2 1/2 cups oats
1 tsp cinnamon
12 fresh dates (medjool), pitted (can soak overnight if you have time)
1/2 cup agave nectar or honey (if using honey, warm so its a thin syrup)
1 cup of roughly chopped nuts of choice (I use a mix of almonds, pecans and macadamias)
1/2 cup goji berries ( can use cranberries or rasins) 
1/2 cup puffed millet
1/2 cup mixed sunflower and pumpkin seeds


Method:
1.Place oats, cinnamon, dates and agave nectar in Thermomix/food processor. Chop on speed 7 for 20 seconds scrapping down sides until oats and dates are very finely chopped and mixture is well combined.
2.Transfer mixture to a large bowl and stir in the nuts, seeds, goji berries and millet (or your choice of add ins) combine well with hands.
3.Line a slice tin with lightly oiled foil. Firmly pat down mixture into tin and freeze for 30 minutes.


4.Remove from freezer and cut into bars. Keep stored individually wrapped in fridge.
