Why would you ever buy store bought Green Curry Paste, when it is this easy!!!! knowing exactly what it is in the food I am feeding my family and cutting out all the nasties is very important to me ;) The original recipe I found on the Thermomix Recipe Community website and adjusted a few things to suit us ;)
You Need:
10 green chillies
1 tsp ground cumin
2.5cm piece of ginger
5 shallots, peeled
2 stalks of lemongrass or 2 tbsp lemongrass paste
6 kaffir lime leaves
5 cloves garlic
1 bunch of coriander, roots and leaves
1/2 cup basil leaves
2 tsp shrimp paste
To do:
Place all ingredients in Thermomix and whiz on speed 9 for 1 minute scrapping down sides of bowl occasionally to make sure chopped well or until becomes paste consistency. EASY!
* Only need 3 Tbsp per green curry so this recipe makes enough for 4 to 5 curries.. Just freeze portions in ice cubes and keep frozen until needed.
