You Need:
a sachet of dried yeast
1 1/2 cups water
3 1/4 cups plain flour
2 tsp mixed spice
1/4 cup Rapadura sugar ( Unrefined sugar made from cane - All goodness is left in rapadura unlike refined sugar)
milk for brushing
Add ins:
1 cup dried dates, chopped
1/2 cup sultanas
1/3 cup cranberries
1/2 cup dried figs, chopped
1/2 cup chopped walnuts
To Do: For THERMOMIX method see below!
- In a bowl sift mixed spice, 3 cups of the flour and stir through sugar. Make a well in the center and add water and dried yeast. Mix well to form a soft dough - can use food processor for this step.
- Tip dough onto a floured bench and knead in extra flour. continue kneading for about 10 minutes or until smooth.
- Place dough in a oiled bowl and cover in a warm spot for 1 hour until dough doubles. Grease a loaf pan and Preheat oven 200°C/180°C fan-forced.
- Using your hands knead dough in bowl until smooth. Turn out on to a lightly floured bench and gradually knead in dates, sultanas, figs, cranberries and nuts.
- Place dough in loaf pan. Cover with lightly greased plastic wrap and set aside for a further 15 minutes to let dough rise again.
- Brush dough with milk and bake for 15 minutes. Reduce oven temperature to 170°C/150°C fan-forced and bake for 30 minutes or until golden brown and sounds hollow to tap. Cool on a wire rack before enjoying warm with butter. YUM
Thermomix method:
First place water than yeast into thermomix bowl, add mixed spice, flour and sugar. Lightly mix together on speed 4 for 10secs. Set thermomix to close lid position and knead dough on Interval speed for 10 mins til smooth. Than continue above from step 3.
