Coconut Curry Meatballs



Okay, so I know these don't look very appealing but Yummmm!!!!  I made these yesterday for lunch and they have been a huge hit! Great for lunchboxes too as they are delicious served cold. We also used the leftover meatballs on homemade pizzas.... Definitely doing that again ;) big thumbs up from me!!

You Need:

650g chicken fillets, chopped into quarters * I used half thigh and half breast as it makes them really moist.
1 carrot
150g mushrooms, chopped
2 cloves garlic
1/2 cup shredded coconut
1 egg
2 tsp curry powder (I used a good quality curry powder)
Salt
2tsp coconut oil
Big handful of flat leaf parsley or coriander leaves (I used flat leaf parsley)

Methods:

Mince the meat in Thermomix in pulses of 4sec til minced well. Or in food processor.

Throw into Thermomix or food processor the rest of the ingredients and blend until smooth and all combined.

Roll out small balls (I made around 20 balls)

Heat some oil in a large fry pan to med-high heat.. Cook meatballs in batches for a couple of minutes each side.

 Put lid on pan and cook a further 8 minutes or until cooked through.
