Pumpkin seed and choc chip cookies



These cookies are a huge hit in our house!! I originally found this recipe from the cookbook "One Delicious Decade". St Andrew's College in Peregian Springs released this cookbook to celebrate the 10 year anniversary of the schools opening  it's a beautiful cookbook filled with lovely recipes from the college community. I have tweaked the original recipe of these bickies to suit me by using natural sugars where I could and less butter
 enjoy! x

You Need:

1.5 cups (270g) self raising flour
45g coconut sugar
3/4 cup (120g) dark chocolate chips
1 cup mix of pumpkin and sunflower seeds (also yummy with oats)
1 egg
1 tsp vanilla extract
60g melted butter
1 tbsp agave nectar or maple syrup


Methods:

Combine all dry ingredients in a bowl or reverse speed 3, 20 secs in Thermomix
Add wet ingredients and combine with woden spoon or speed 3 reverse, 30 secs in Thermomix. Shape into balls, flatten on tray slightly and bake in oven for 12 minutes til golden.
super quick, super easy and super yummo!
