
You need:
400g rhubarb, thinly sliced ( or I usually use half apple half rhubarb)
1/2 cup coconut sugar
2 Tbsp Maple Syrup
1 Tbsp cornflour
vanilla bean, split and seeds scraped
Homemade pastry - I make a vanilla pastry for this pie
1 egg, lightly beaten
Rapadura - optional *Rapadura is another great natural sugar alternative to refined sugar.
To do:
Preheat oven 160. Place all ingredients except pastry and egg in a bowl and mix well to combine. set aside.
Roll out two pieces of pastry about 3mm thick each. Line the base of a lightly greased pie tin with a piece of the pastry.
Place rhubarb mixture into pastry shell and place remaining pastry on top, press around edges to seal. Brush with egg and sprinkle with Rapadura to give it that caramelised finish.
Bake for 45mins or until pastry is cooked and golden.
